Recipe du Jour: Red Beet Chocolate Sheet Cake

I was reluctant to try this cake, as I had a hard time associating red beets with chocolate. I love pickled red beets, but other than that I am not too fond of red beets. But when I took my first bite of this cake I was amazed by the taste. It is a very moist cake and you cannot taste the red beets. Neither can you taste the chocolate chips that were added. My daughter Elizabeth doesn’t care for red beets at all either, but she agreed that you couldn’t taste the beets. She said this is probably the only way she could eat red beets. I gave my youngest children a piece, and they really went for it. This is not a cake you eat warm, so let it cool completely before serving.

Mmm… I love these little pumpkin cookies! I always get in the mood for them around halloween and thanksgiving. Pumpkin is just so fall! And what’s better than a cookie with no butter, oil or shortening in it? This is about as healthy as cookies come. This is a pretty common recipe, but a Skinny Bovine addition of oats makes it so one cake mix can make double the cookies! (If you don’t buy oats in bulk then it may be cheaper for you to use the whole cake mix and no oats, but the oats make them yummer, I promise!) Continue reading »

My brother and I threw a dinner party for 10 close friends that I miss and see less often now that they all moved to Los Angeles. It was up to me to plan dessert. Without much time and a bit of jet-lag, I decide to go easy on myself and do something that is half store-bought (but could be 100% homemade if one makes ice cream from scratch) and half made by hand.

My wonderful friend, Kim Ficaro has a birthday today. She is without a doubt, one of the most creative people I know, who transforms the ordinary into utter beauty.

She helped style and art direct my book, and I love seeing her work in food, design, and home magazine, catalogs, and newspapers. She uses flowers, found objects, and beautiful fabrics to make stunning arrangements. She also uses many textiles for tablecloths, or for accenting a plate of food.
