Thanksgiving Sides: Yummy Broccoli

Bring it on Broccoli

This is one big bowl of healthfulness. Perfect for lunch topped with goat cheese or in place of rice, cous cous or pasta for dinner. Tonight i served it with a Teriyaki Pork Tenderloin.

 

3 cups cooked quinoa
2 cups cooked broccoli chopped
garlic
2/3 cup of any toasted nuts
1/3 cup of any hard cheese grated
1/4 cup olive oil
1/4 cup yogurt
salt and pepper to taste
a squeeze of lemon juice

Puree the broccoli, garlic, nuts, cheese, salt, pepper and lemon juice in a food processor. Drizzle in olive oil and yogurt and pulse until smooth.
Stir into Quinoa.
