Vegetarian or Chicken Tikka Masala is one of our favorite Indian dishes.  Masala is a slightly spicy tomato-based sauce that is commonly believed to be a product of Indian-British fusion cooking, although the origins are somewhat unclear.   When you add yogurt to it, you get a Tikka Masala sauce that is nicely balanced with the cooling taste of yogurt, complex and very creamy, but not at all heavy.   It is great over plain steamed basmati rice or quinoa, along with some Tandoori Naan (available fresh or frozen in several flavors).

1 (15-oz) jar Masala Simmer Sauce (not to be confused with Marsala Sauce!)
1 (12-oz) bag Cauliflower Florets or 4 cups cauliflower, cut into
bite-size pieces
1 medium zucchini, unpeeled, diced into ½ inch chunks (about 1 cup)
½ cup frozen peas
¾ cup canned garbanzo beans
½ cup carrots, thinly sliced (optional)
½ cup plain yogurt, such as Plain Cream Line Yogurt

1. Pour masala sauce in a wide large saucepan over medium heat.
2. Add cauliflower, zucchini, peas, garbanzo beans, and carrots.  Stir
until all ingredients are coated.
3. Once simmering, cover pan and turn heat to medium-low.  Simmer for
an additional 12-15 minutes or until cauliflower and carrots are just
tender.
4. Mix in yogurt, bring to a simmer again, and then remove from heat.

Prep time: 5 minutes
Hands off cooking time: 15-20 minutes
Serves 4

Wine Suggestion: Pair curry with a white wine like Husch Chardonnay, full of citrus and tropical flavors.  Beer is also a great choice for
curry – the bubbles break up the spice on your palate.
