Perfectly suited to create such an assignment, Zac Young of Bravo’s Top Chef Just Desserts challenged the YouTube Next Chefs, “Make a cookie that shows your personality.”
I briefly contemplated a few of my favorites like White Chocolate Macadamia Nut and the nearly legendary Holiday Disco Cookie. But when it came down to a cookie that really explains my personality, I had to go with the Sugar Cookie. And no. It’s not because I’m so sweet.
I love to bake chocolate chip cookies with my kids and we have gotten quite good at it. There are a few tricks that make all the difference: good chocolate, butter, and (the most crucial step) letting the dough sit in the refrigerator 24-36 hours before baking. The butter needs to be the right temperature for everything to mix together properly, slightly soft to the touch but not mushy. I also like to make the cookies big (this increases the baking time) and finish them with the tiniest sprinkle of sea salt. I use Ghiradellli chocolate chips and follow the recipe on the back with the modifications below. Perfect!

My friend Christine is originally from Sichuan Province, China. To see her in the kitchen is a thing of magic and mystery. She uses chopsticks for everything. And I mean everything. In her delicate hand, chopsticks become an art form. Of course she eats with them, but she stirs and sautes with them too. In fact, I’ve even seen her make meatballs with chopsticks.
I just got a KitchenAid Pasta Maker attachment for my birthday. It was a total surprise because I’ve never really asked for a pasta maker. But, I guess you could say I’ve been mildly obsessed with fresh spaghetti ever since I met Chef Victor Casanova at Culina, Four Seasons Los Angeles. It is no exaggeration when Chef Vic says his Spaghetti with San Marzano Tomatoes, Peperoncino and Fresh Basil is, “love in a pan.”
