What to serve for Christmas dinner dessert is a big decision. We’re collectively not fond of pumpkin pie, which seems more Thanksgiving-y anyway, and plum pudding hasn’t been the same since my Grandma isn’t around to make it anymore. (Also – it was so heavy after a full turkey dinner!) Pie is always a perfect fit, and in late fall and winter I tend to want apple – the addition of cranberries adds a tangy, festive touch, and it’s perfect topped with vanilla ice cream.
With the saying “as American as apple pie,” we’re quite accustomed to thinking a holiday isn’t a holiday without homemade apple pie. It’s hard to resist the temptation to buy one from the store instead of taking the time to make your own, but it’ll be much easier if you carve out a bit of time now to peel, core, and slice a variety of farm-fresh apples. Then, with a few simple ingredients, you can make and freeze apple pie filling that can easily be defrosted and baked in prepared pie dough. How’s that for homemade pie in a pinch? — Alison J. I’m a huge fan of apple pie at this time of year – when not only are apples at their peak, but far more varieties are available in grocery stores and at farmers markets.
