Meatless Monday – Baby Bella Philly Sandwiches
This is a dinner I came up with “on the fly” recently. I’ve had it on my mind for a while, and I usually have most of the ingredients in my fridge, so it was just a matter of time until it actually came together. Portobella mushrooms are a great filler for any meatless meal, they are hearty, and can easily adapt to most recipes that include beef or chicken. These sandwiches are filled to the rim with sauteed portobellas, peppers and onions…and then topped with melty provolone cheese. Top with your favorite steak sauce and you’ve got yourself a great dinner sandwich.
Burrito Night for a Meatless Monday
Meatless Monday has become more than just a passing trend. For many restaurants, families and schools – Meatless Monday has become an easy way to add some “veg” to your diet. And one way to veg up your dinnertime is by making your “Burrito Night” meatless! Burritos are a perfect vegetarian or vegan food. Veg burritos are rich in protein, fiber and flavor. Plus they satisfy even the hungriest of tummies. Meatless Monday – Spaghetti with Chickpeas and Spinach
This pasta dish has made an appearance in my kitchen quite often…usually on nights where I really don’t want to fuss too much over what’s for dinner. I guess you can call this pasta an old standby…you know, old reliable.
It’s got everything you need to make a complete nutritious meal…whole wheat pasta, spinach & onions, and garbanzos for nice boost of protein. I saute the veggies in one pan and marry it with the cooked pasta once its done. Drizzle some olive oil and sprinkle parmesan and red pepper flakes and you’ve got yourself a nice meal. And if the kids aren’t into all of that…keep theirs simple like I do and serve them a nice plate of spaghetti with garlic and olive oil.
Cheesy Black Bean and Pepper Enchiladas
I guess I’m exposing a bit of myself by posting my 3rd Mexican inspired recipe in a row. It’s not a bad thing right? Enchiladas are one of my favorite dinners to put together when I’m trying to clear out some items in the produce drawer and pantry. That’s pretty much how these enchiladas came about…and my fridge is feeling a bit “lighter” today.

There are many nights, as I’m sure many of you agree, that I just want to throw something quick and healthy on the table. Many many nights. Especially during the summer after a day of working or playing in the heat.
I created this colorful noodle bowl on one of those nights using up what was in my produce drawer, freezer and pantry.
Meatless Monday – Eggplant Burgers with Tzatziki
I’m not really much of a planner. There are moments when I really like that about myself and then there are moments when I really don’t. Dinnertime is usually one of those moments. Let me rephrase that…dinnertime is definitely and most always one those moments.
This recipe smacked me in the face one morning while hanging out on Twitter. I love eggplant and am always looking for new ways of cooking it. On that day I actually had a few Japanese eggplants ready to be picked from my little garden so I knew these Eggplant Burgers had to be dinner. So in my effort to “plan ahead” I went out and picked those eggplants, and prepared the patty mixture in a bowl during lunchtime so that dinner time would be a little more organized. I even made the tzatziki sauce ahead of time too.

Meatless Monday: 5 Reasons Why It Matters
Meatless Monday is a non-profit initiative whose goal is to cut the meat consumption in the U.S. by 15% in order to improve the health of our nation’s citizens and reduce global warming. How do they hope to accomplish this? You got it, ask citizens to cut out meat one day per week in favor of fruits and vegetables. To some this may seem like a push to turn us all into vegetarians, but I assure you this is not the case. Cutting meat (all forms of beef, pork, poultry and fowl) out of our diet one day per week can make an enormous change to our health and the state of our planet. Well-known Chef’s and public figures are on board with this initiative and I encourage everyone to think about joining them. Our own Jenny even interviewed a Mom who has introduced Meatless Monday into her children’s school lunch program. I’ve been cooking at least one vegetarian meal a week for two years now and can attest that it is incredibly easy and, in most cases, incredibly delicious to give up meat for a day.
