Last week I was in San Francisco and visited a whole bunch of my favorites places there. There are so many amazing restaurants in the city and I can’t get enough of the open skies and delicious weather. One of my favorite bakeries in the area happens to be Miette. It is in the Ferry building and is so beautiful. They made the most gorgeous macaroons and luscious cakes. One thing I tried while I was there were these tasty chocolate wafers. Amazingly, the tasted a lot like oreo cookie wafers, only much better.

When I saw these cookies on The Today Show earlier this year I was thrilled. I’ve been baking with diet soda for quite a while and loved the way Hedy Goldsmith, the author of the recipe, used Pepsi to punch up the flavor of her cookies. What a fabulous idea! Naturally, I had to give them a try at home. After all, my household has hardly ever met a cookie it didn’t like!
St. Patrick’s Day is this Saturday, and in honor of the Irish event, Magnolia Bakery has greened their whoopie cookies by offering them in a mix of vanilla filled and a green mint buttercream in between the rich chocolate wafers. These are just like homemade Oreo cookies, but so much better than just an Oreo. Plus, did you know they deliver?
I discovered the ease of baking shortbread cookies around this time last year when this recipe caught my eye. It sounds silly I know, but really had no idea how simple shortbread was to bake up! This recipe for “grown up” cookies was in my local newspaper and when I read through the ingredients I knew I had to make them. I love the flavor of a good Irish coffee and to incorporate that into a buttery crisp cookie topped with a sweet Irish whiskey glaze seemed like no-brainer to me. The Oreo cookie celebrates it’s 100th Anniversary on March 6th. Can you believe people have been eating Oreos for 100 years? I am a fan of the black and white cookie and am personally pleased that it was stayed popular on store shelves for so long. There are not many brands that can boast that achievement. Not surprisingly, throughout the years many people have also been deriving ways to cook and bake with Oreo cookies. Turns out they make a mean pie crust, tasty cheesecake and are excellent for stuffing into the middle of brownies! Here are twelve of my favorite simple treats to make with Oreos!
I have to admit I am a sucker for Girl Scout cookies. Not just any Girl Scout cookie, the thin mint cookies. They get me every.single.time. sigh I’m quite particular about them too, I think they’re best fresh out of the freezer. I’m not sure why but that’s how I like them. So when the cookies are being sold I stock up and keep them in my freezer. They don’t last long but while they do I like to make them into milkshakes too!
