Tomorrow night my husband and I are going to have our Valentine’s date night while my son enjoys a Valentine’s Day pajama party at his school. Easy Homemade X & 0 Nilla Wafers
Nilla wafers are one of those nostalgia foods I still pick up every now and then. I seriously love their sweet vanilla-y taste and often use them to dip in yogurt or pudding at the end of the day for a sweet treat. The other day I found a cool article on Serious Eats with an article for homemade Nilla wafers. I decided to give them a whirl and decorate them with cute X’s & O’s for Valentine’s Day. We loved their sweet look and manageable size. Two little ones dunked in milk after dinner were the perfect Valentine dessert!
Football Chocolate Chip Cookie Pie
Are you ready for the Big Game? I live in Giants country and was raised by a Giants fan so I know who I’ll be rooting for. I always find the fun thing about big-game entertaining is that the food is generally easy and fun to make. Take, for example, this awesome cookie pie. I just use my awesome cookie pie recipe and cut it out in the shape of a football and serve it up alongside crudite, dips and the like.
Espresso Chocolate Chunk Cookies
There are few things better for getting over that mid afternoon hump than espresso and dark chocolate – wrap them up in a soft, chewy, crispy-edged cookie and I’m all yours. These little dreams are made with extra dark chocolate, chopped into chunks so that you get that range of big pieces and itty bits dispersed throughout the brown sugar dough. Instant espresso takes the place of vanilla, giving it a coffee kick without keeping you up all night. Although if you do find yourself awake, these do make a mighty fine midnight snack, served with a cold glass of milk.

Perfectly suited to create such an assignment, Zac Young of Bravo’s Top Chef Just Desserts challenged the YouTube Next Chefs, “Make a cookie that shows your personality.”
I briefly contemplated a few of my favorites like White Chocolate Macadamia Nut and the nearly legendary Holiday Disco Cookie. But when it came down to a cookie that really explains my personality, I had to go with the Sugar Cookie. And no. It’s not because I’m so sweet.

Browned butter sounds really fancy but it’s not really. What is browned butter exactly? In a nutshell, it’s just melted butter that you keep cooking over the heat until it turns a gorgeous golden color. Then the magic happens when it caramelizes its natural sugars. If you like butter then you’ll absolutely love browned butter. It’s like bacon, it makes everything better! Not to mention it is amazing in both sweet and savory dishes (like that browned butter macaroni and cheese pictured above).
