We do a lot of boat trips in the summer and I have to think about a few things when packing for them. I need to make food that is portable, can be eaten with one hand – because I am usually holding onto the rocky boat with the other – and something that doesn’t require any reheating. This isn’t quite as easy as you might think! Yes, I make a few of the usual suspects – delicious chicken salad, perfect iced tea in plastic tumblers – but I also break out some really fun things like food on skewers and tasty wraps. Nutella Rice Krispie Treats for Memorial Day!
I couldn’t help myself the other day when I was making Rice Krispie treats… I had to add nutella! I figure, I’ve made them before with peanut butter so why not give them a simple chocolatey twist. We loved the whole treat so much my daughter and I nearly polished off the whole plan. Seriously – they were awesome. So, why not give your favorite summer treats a nutella twist this summer? Herradura Refresher
I’ve thought I had my Memorial Day weekend menu all planned out, but I almost forgot the cocktails! I love making refreshing, cool cocktails for our friends and family. I’m partial to margaritas and mojitos, so I’m always looking for cocktails with a citrusy or minty flair.
Below is an amazing minty tequila cocktail recipe that we’ll be trying out this weekend.
Herradura Refresher
Ingredients
2 oz Herradura Silver
½ oz Freshly squeezed lime juice
½ oz Simple syrup
1 inch Cucumber (diced)
6-8 mint leaves
Top soda
Glass: Hi-ball
Garnish: Cucumber disc and a mint sprig
Instructions
1.) Place mint then cucumber into a cocktail shaker and gently crush with a muddler.
2.) Add the Herradura Silver, simple syrup and lime juice to the shaker.
3.) Fill shaker with Ice and shake vigorously to break down the mint and cucumber
4.) Strain through a fine strainer (to remove all the little bits of mint) into an Hi-ball glass filled with cubed Ice and top with soda.
5.) Garnish with a cucumber disc and a mint sprig.
