Weekend Baking: Tate’s Bake Shop’s Carrot Muffins
My kids absolutely love it when I bake them muffins. It might be considered weird if they didn’t I suppose. I don’t bake very often but when I do, it’s usually a muffin. I love that muffins can usually be put together in one bowl and with minimal effort. I’ll admit, I am a lazy baker.
I’ve made these Carrot Muffins from Tate’s Bake Shop Cookbook many times and they always turn out delicious. The smell that fills my kitchen when I bake these is full of warm sweetness and the smile on my children’s faces when they see them on the counter makes my heart smile. If you are in the mood for baking this weekend, give this muffin a try.

Meatless Monday: Make Ahead Pinto Bean and Cheese Burritos
Are you trying to incorporate more meatless meals into your weekly menu? I started doing it a couple of years ago and it’s become second nature to me to look at meals from a more vegetarian stand point. My family is not vegetarian, but we do balance out our meals very well to include protein of all kinds, especially protein that comes from plant-based foods such as beans, grains, and vegetables. The more aware you are of the nutrients found in foods of all kinds, the easier it becomes to work more meatless meals into your diet and the better it is for your health.
One of my favorite meatless meals usually consist of beans, vegetables and a grain of some sort, in this case it’s a tortilla. The beauty behind these burritos is that they can easily be assembled ahead of time, say the morning of or night before, and kept in the refrigerator until your meal time. You can even take the preparation one step further by customizing each burrito for each family member and just marking the foil with a name or initial. Your family won’t miss the meat in these, and you won’t miss scrambling to put dinner on the table on those busy weeknights.
Fish For Friday: Homemade Crispy Fish Sticks
We all know the frozen fish stick well don’t we? But have you met the homemade version yet? If not then I insist that you do. I mean, just look at that crunch up there in that picture. That is the work of my favorite kind of breadcrumb called panko. You can’t get that type of crunch from the freezer, you just cant. When I make these for my kids, they go nuts. And so do I. They are perfect for those of us looking for recipes for Fridays during Lent, and we have a few of those Friday left still. And did I mention that they are baked and good for you too?
Grab your panko and your ketchup bottle for dipping and make these homemade crunchy fish sticks tonight.
Cookbook Giveaway: Sophie Dahl’s Very Fond Of Food – A Year In Recipes

Though I have yet to physically pick up her latest cookbook, I already know that I will be on the look out for Sophie Dahl’s newest collection of recipes – Very Fond Of Food. Amazon’s Look Inside feature makes it so easy to shop for cookbooks without ever stepping into a bookstore, you can usually get a good feel for a book just by browsing through a few pages, looking at the table of contents and skimming the introduction.
What I love about this new cookbook is how it’s broken up into seasons, then even further into courses. The focus of this cookbook is most definitely seasonal eating using the freshest ingredients and if you are a health-minded home cook you are in for a treat.
