Roasted Brocc Help A Picky Eater Out: Roasted Garlicky Broccoli

If you asked my kids what their favorite vegetable is, I’m almost 100% certain they would say broccoli. This could be considered a little weird, I know. I’m not bragging about them loving broccoli, but as a mom, I sure am proud of that. My kids are certainly not perfect eaters, but they have learned that it’s not the end of the world to try something new or different every now and then. I have been making roasted broccoli for my family for years now, and I think this is the recipe that helped them come around to liking the little green “trees” on their plates. It’s become my go-to veggie to make on busy nights that I know the whole family will eat and love.

If you’ve got a picky eater on your hands, help them out a bit by trying new ways to cook the vegetables you want them to try. Roasting broccoli is a perfect way to enhance it’s flavor, keep its color and crunch, and even crisp it up a bit (which is my favorite part). Change it up every now and then by adding lemon zest or grated Parmesan to it.

Roasted Garlicky Broccoli
Recipe from Aggie’s Kitchen

1 head broccoli, cut in florets
1-2 tablespoons olive oil
sea salt or kosher salt
fresh ground pepper
1-2 garlic cloves, minced (optional)
red pepper flakes (optional)
grated Parmesan cheese (optional)
lemon zest (optional)

Toss broccoli florets with a little olive oil, salt and pepper (and some chopped garlic or red pepper flakes if you like). Roast in 400 degree oven for about 20 minutes or until slightly crisped and browned.

 

Serve your roasted broccoli alongside:
Pasta and Shrimp Arrabbiata
Crunchy Almond Crusted Tilapia
Asian Turkey Burgers with Peanut Sauce

This is the only way I can get hubby to eat broccoli. We make ours with 1/3 c toasted panko and 2 cloves of garlic. Then I add 1/4 c shredded cheddar for the last 5 min of cooking. So good!

My kids love broccoli too and call them fairy trees.;). A delicious way to prepare broccoli.:)
