Grilled Cheese EGg Sandwich Fun: Egg in the Hole Grilled Cheese

Sometimes it is fun to see just how over the top I can take a grilled cheese. I mean, why have a regular grilled cheese when it can be filled with all sorts of other things?! This time I decided to try and combine my two favorite things: grilled cheese and egg in the hole. I made my usual grilled cheese, but then cooked an egg in the top of it. OMG, it was SO GOOD! It was also very filling and set me up for the whole afternoon. I didn’t eat one single snack before dinner. My new favorite sandwich? Probably.

Egg-in-the-Hole Grilled Cheese

2 slices whole wheat bread

2 slices cheddar cheese

1 egg

Butter as needed

Salt & Pepper

Circle cookie cutter

1. Melt a pat of butter in a skillet. Place the cheese between the two slices of bread and begin to cook the sandwich over medium-low heat. When that side gets lightly browned and crispy flip the sandwich and cut a circle out of the top of the grilled cheese.

2. Crack the egg into the hole – it will spill over and place a lid on the skillet. Allow the egg to cook for two or three minutes, or until desired consistency. Serve hot with a sprinkle of salt and pepper.
