Sweet Treat: Cranberry-Almond Muffins
My kids go nuts over fresh baked muffins. I don’t bake very often, but when I do, it’s usually a muffin of some sort that I know my kids will love as an after school snack or a treat in their lunchbox. I tried this Leftover Cranberry Sauce Muffin recipe from my friend Maria right after Thanksgiving when I needed to use up none other than…leftover homemade cranberry sauce. They were bright in flavor as well as color thanks to the tangy cranberry sauce and a hint of orange zest, and had a little crunch in their texture with my last minute add in of crumbled sliced almonds.
You don’t have to enjoy these muffins only when you have leftover holiday cranberry sauce however…you can easily whip up a batch of homemade cranberry sauce or reach in your pantry for a can, no matter what the season.
To make these delicious muffins, I followed Two Peas and Their Pod’s Leftover Cranberry Sauce Muffins recipe and added 1/4 cup crumbled sliced almonds to the batter before baking. They were a hit with my entire family!
