Apple Endive Salad with Poppy Seed Dressing
Just because it’s winter doesn’t mean we can’t enjoy a beautiful winter salad. I received some gorgeous fresh endive over the weekend, and couldn’t wait to put it in a simple salad. I paired the endive with apple, cucumber, onion, and radish. The radish is an optional ingredient. Radishes are a little too spicy for my son, so we only added the radish to our salads.
For the dressing, I made a sweet and tangy poppy seed dressing. It’s sweetened with honey. This dressing not only pairs wonderfully with this salad, but just about any other salad you want to put on it.
Apple Endive Salad with Poppy seed Dressing
Ingredients
For the salad:
6 small heads of endive, chopped (I used green and red)
1 sweet apple, chopped
1 medium cucumber, chopped
6 radishes, sliced thin
1/2 red onion, chopped
For the Dressing:
2 tablespoons honey
2 tablespoons apple cider vinegar
41/4 cup olive oil
1/2 teaspoon dry mustard powder
1 teaspoon poppy seeds
1 clove garlic, grated
