Potlikker, the water used to boil greens in, used to be an ingredient of necessity in Southern cooking — a way to stretch your food when times were tight. Luckily most of us don’t find ourselves in that kind of situation now, but it’s still a great way to add some flavor and maybe little bit of added nutrition to a budget-friendly family meal.

This potlikker recipe is tasty and frugal with delicious but inexpensive ham hock coupling with the potlikker to make a wonderfully flavorful and aromatic meal. The egg noodles make it cozy and filling. It’s also a very adaptable dish. We like ours spicy and added chili sauce and red pepper flakes but our daughter, like most kids, prefers milder fare and enjoyed hers with just a little salt.
