Wake Up to Oatmeal Apple Muffins
In the summertime, I enjoy a fresh fruit smoothie or bowl of cold cereal for breakfast. But in the wintertime, when the mornings are cool and I’m getting up before the sun, I really like something to warm me up. And because these Oatmeal Apple Muffins smell and taste a lot like fresh apple pie, they not only warm me up, they wake me up.
If you have about a half an hour to spare in the morning, you can make these Oatmeal Apple Muffins fresh. Since I rarely have time in the morning, what I like to do is make a batch and freeze them individually. I can take one out of the freezer before I go to bed and let it thaw on the counter overnight. In the morning, my muffin is only 15 seconds in the microwave away from being warm, fragrant and revitalizing. It takes longer to brew the coffee!
