After all those nachos and chicken wings and dips you might as well reduce a teeny bit of guilt with these brownies. They’re still a crowd pleaser; we just reduced some fat and sugar. And they’re so easy to make my two year old can do it. And so he did! I helped measured. He poured, stirred and licked. Check out my 2 year old baker after the jump…

Measuring The Sugar
He needed a little help getting the proper measurement.

Reduced Guilt Football Brownies

3/4 cup sugar

1/2 cup whole wheat pastry flour

1/3 cup all purpose flour

heaping 1/8 cup almond meal

2/3 cup unsweetened cocoa powder

1/4 teaspoon baking powder

1/2 teaspoon salt

1/4 cup butter, softened

1/4 cup plus 2 tablespoons vanilla yogurt

1 teaspoon vanilla

3 egg whites

1 tube of white icing.

Preheat oven to 350 degrees. Grease 9 x 9 baking pan. Combine the dry ingredients. Pour in the yogurt, butter, vanilla and egg whites and stir until all big lumps are gone. Pour into baking dish and spread evenly. Bake for 20 to 25 minutes or until toothpick comes out clean. Using a football shaped cookie cutter, cut out as many shapes as possible and ice the tops to look like football laces. Makes 8 brownies and recipe can easily be doubled.

I made these today for our SuperBowl festivities. Love the reduced guilt part! I tried to go all homemade with my icing, and made it too thin, so it was a bit of a fail,… in as much as edibile brownies can be a fail!

I’m linking to this on my blog.
