Guacamole recipe1 Creamy Dreamy Green Guacamole

You can pretty much always expect a bowl of my favorite guacamole at any get together or party I have in my home. Guacamole, spiced up perfectly with lots of lime, cilantro and jalapeno, is always a hit with my friends, and I love serving it as part of a festive salsa bar. Tortillas, salsa and fresh guacamole…it doesn’t get much better than that in my opinion.

With Super Bowl Sunday around the corner, consider treating your football guests (and yourself) to a fun salsa bar…a little effort can go a long way especially with a couple of different salsas like homemade pico de gallo, salsa verde and a kicked up pineapple or mango salsa. I usually find my avocados at a great price at Costco, along with a few shortcut salsas like this tasty Jack’s Fresh Salsa and this mango salsa with peach that I just love.

Try out my “old, reliable” recipe for a creamy, dreamy green guacamole that you will be sure to love…

Guacamole
slightly adapted from Pink Plaid Better Homes and Gardens Cookbook

3 medium very ripe avocados, halved, seeded, peeled and cut up (ripe = soft to touch, if they are hard, let sit out on counter or in open paper bag to ripen)
1 medium onion, finely chopped
1 or 2 fresh jalapenos, seeded and finely chopped
3TB chopped fresh cilantro (or more if you are me!)
juice from a lime
2 cloves garlic, finely minced
good pinch of coarse salt and fresh ground pepper, to taste

Combine all ingredients into a bowl. Smash avocado with fork, mix to combine. Taste for salt.

I usually leave mine a little chunky, but mixed well.

My kids love homemade guacamole. In a pinch I just smash up avocado, salt and lime juice. Will have jazz it up next time like yours!

My mom has a secret to guacamole that astounds most people. Instead of lime juice, she uses orange juice. It’s a little bit mind blowing!
