6 Secret Scramble Ingredients!
I am a huge fan of whipping up a pan of tofu scramble on a weekend – or weekday! Breakfast, lunch or dinner I crave a delicious, hearty, protein-rich scramble. Scrambles are incredibly versatile and can be served right out of a hot skillet or rolled into a yummy breakfast burrito. I’ve been playing around with various scramble recipes ever since I started blogging and there are a few ingredients that I’ve found really pump up the flavor volume! Here are my 6 Secret Tofu Scramble Ingredients!..

note: I’ve only used these ingredients for tofu – but you could certainly try them in traditional egg scrambles if that is what you prefer.
6 Secret Tofu Scramble Ingredients
1. Truffle Oil. I hate it when chefs, cooks, foodies and bloggers say that truffle oil is “overused” and “so last season” – maybe it was trendy for a while, but for good reason. It is delicious! Truffle oil is absolutely amazing when added to tofu scramble. The salty sweet scramble flavor instantly turns gourmet with a splash of truffle oil. Try white or black truffle oil. Add about 1-3 tsp to a full scramble skillet and wait for instant aromatic bliss.
2. Nutritional Yeast. Hands down my number one favorite flavoring ingredient for tofu scrambles. I add about 1/2-3/4 cup to each skillet of scramble. Sometimes more! It adds cheesy savory flavor and plenty of healthy nutrients. It also adds to that yellow scramble color.
3. Umeboshi Vinegar. This is one of my ultra-secret ingredients that I only recently discovered. Adding 3-8 teaspoons of umeboshi vinegar to your tofu scramble will give it a surprisingly authentic “egg” flavor. It gives the tofu a unique acidity that I can only really describe as irresistible. A must-try secret ingredient for any scramble connoisseur.
4. Saffron. I add saffron on special occasions. It adds a lovely sweet, earthy flavor that really gives a low-brow scramble some high-brow flavor. Add a few strands at the beginning of the cooking process and watch them melt into the tofu. Saffron also adds to the yellow color. Add a splash of soy milk or creamer if your scramble is a bit on the dry side – liquid helps the saffron bloom.
5. Tamari. I don’t add salt to my scrambles. I add tamari! It infuses the tofu with savory salty flavor. I prefer tamari to soy sauce – the flavor is more delicate and nutty. Add about two tablespoons to your scramble – or add to taste just as you would salt to taste.
6. Turmeric. If you are looking for some truly neon yellow colored tofu – go with turmeric. Not only does this spice add a nice sweet, peppery, rustic flavor – it turns your tofu into egg-colored, vegan dish, joy. Turmeric is also known as a super spice since it is a healthy ingredient with anti inflammatory properties, known to treat a wide variety of ailments.
A few other awesome scramble ingredients: fine black pepper, dried spices, fresh herbs, chopped onion and other veggies, liquid smoke, a splash of maple or agave syrup, cayenne.
