How to Make Slow Cooker Bacon Jam

That’s right you read correctly Bacon JAM! I was first introduced to this deliciousness by my friend Amanda. She gifted me with a jar of bacon jam and I was hooked from the first spoonful. I knew I had to try and make it for myself. What is bacon jam? It’s just what it’s name implies.  It’s bacon that’s sticky and sweet and super concentrated with a jam like consistency. What do you put bacon jam on? Everything. It’s a condiment that’s fantastic on burgers, sandwiches, baguettes. You name it! So grab your favorite bacon and follow the jump for the recipe! 

Slow Cooker Bacon Jam
What you’ll need:
1 1/2 pounds bacon – chopped
2 small onions – chopped
2 cloves garlic – crushed
1/2 cup brown sugar
1/4 cup balsamic vinegar
1 cup brewed coffee
salt/pepper

What to do:
1. Into a medium size saute pan over medium heat, add bacon and cook until bacon is browned. Stirring as necessary. Transfer bacon pieces to a plate lined with paper towels to absorb grease.

2. Discard all but approximately 1 tablespoon of bacon grease. To pan add: onions and garlic. Cook until onions are softened. Add: brown sugar, balsamic vinegar, and coffee. Season with salt/pepper. Increase heat to high and bring to a boil. Once boiling, turn heat off. Add bacon. Mix to combine.

3. Transfer mixture to your slow cooker and cook on LOW for approximately 3-4 hours OR until mixture is thickened.

4. Once cooked you can leave mixture chunky or you can run it through your food processor/blender until it’s at your desired consistency.

NOTE: Store in an airtight container the in refrigerator for no more than 3 weeks.
