Grilled Cheese A Skinny, Gooey Grilled Cheese So Your Jeans Still Fit!

Ok, let’s get real. A grilled cheese is one of the best (if not the best) cold-weather sandwich out there. (Yes, it is great in summer too). The only problem is that it is tough to eat one everyday because it is, well, melted cheese and butter and white bread. Calorie heaven. My daughter is welcome to these heavy cheesy sandwiches but I’ve got to be a little smart. Recently I’ve been working on finding a way to make my grilled cheese skinnier. This is not a fat-free sandwich, mind you, but it is lower fat, but not lower taste. I’ve been making these a lot in the past two weeks and my jeans still fit!

The Skinny Grilled Cheese

2 slices country bread or whole wheat bread (the healthiest bread you can find is fine, too)

2 teaspoons light butter substitute (I use Earth’s Balance)

2 slices lacy Swiss cheese

2 teaspoons dijon mustard

1. Spread the mustard on the inside of one of the bread slices and layer the Swiss cheese on top. Close the sandwich and swipe one teaspoon of the light butter on the outside of each slice of bread. Warm a skillet over medium heat and add the sandwich. Toast the bread on low heat until golden brown, then flip and toast the other side until golden brown. Remove the sandwich from the pan, slice and serve.

Have I heard of that brand? BUT OF COURSE! I have no idea how you find brngaias like that Biz. Maybe I’m just not patient enough in thrift stores…The cool weather is headed our way. Hard rain first of course but fall-like temps on the other side. Fall is my second favorite season. Actually summer and fall are the only two seasons I like!
