Got Leftovers? Try Teriyaki Turkey
Looking to recycle those turkey leftovers into something that doesn’t resemble the original meal? Try turkey Teriyaki, made with a sweet and sour sauce that’s simple to stir together and simmer with chopped leftover turkey, transforming it into something you can serve with rice and Asian veggies like broccoli, pea pods, carrots or bok choy. It’s better than takeout, and you probably have all the ingredients in your cupboard.
This could me made even without leftovers – sauté chunks of chicken or turkey breast or thigh until cooked through, remove with a slotted spoon, cook the sauce, then return the meat to the pan and stir to coat.
Teriyaki Turkey
Ingredients:
1/2 cup white or brown sugar
1 Tbsp. cornstarch
1/4 cup soy sauce
1/4 cup cider or rice vinegar
1/4 cup apple juice
1 garlic clove, finely crushed
2 tsp. freshly grated ginger
pinch red pepper flakes
2-3 cups chopped leftover turkeyDirections:
In a large skillet, stir together the sugar and cornstarch, getting rid of any lumps. Set over medium-high heat and whisk in the soy sauce, vinegar, apple juice, garlic, ginger and pepper flakes. Bring to a simmer, whisking often, until the mixture bubbles and thickens.Add the cooked turkey and stir to combine; cook for another minute or two, to heat the turkey through. Serve over rice or noodles. Serves 4-6.
