Christmas Pizza Bagel Wreaths
When I saw these little wreaths yesterday on Catherine’s site, Weelicious.com, I just knew I had to make them ASAP. They are super fun, so easy, and even nutritious. I took a few shortcuts with these by using bagged shredded cheese and jarred pizza sauce. For toppings, Catherine recommends using chopped steamed green beans, peas or broccoli. Here I used chopped sauteed broccoli and spinach. I am sure you could get creative and use whatever green veggie you like.
Christmas Pizza Bagel Wreaths
Ingredients
1 small bag baby spinach
1 cup chopped broccoli
salt
olive oil
roasted red peppers, from a jar, sliced thin
4 bagels
1 cup shredded mozzarella cheese
1/2 cup jarred pizza sauce
Instructions
Preheat oven to 450 degrees. Preheat a large skillet and drizzle with olive oil. Saute spinach with a little salt. Remove from pan and set aside. Drizzle pan with olive oil again and add chopped broccoli to pan. Add salt to taste. Saute until deep green. Remove from pan and set aside.
Separate bagels and lie on a cookie sheet. Spread pizza sauce on bagel. Sprinkle with shredded mozzarella. Then top with broccoli or spinach. Arrange two slices of roasted red peppers like a bow.
Bake for 8 – 10 minutes, or until cheese is melted.
