Green Grinch Oreo Cookie Fake-Pops
‘Tis the time of year for truffles or, in our house, cookie truffles. I LOVE making real truffles, of course, but the fake cookie truffles can be so much fun for a party and they are a cinch to make. The other day I made this minty green version with the blond Oreo cookies and added some food paste and mint extract. Then I dipped them in white chocolate and they were amazing. They were just the kind of delicious fun we need during the holidays!
Green Grinch Cookie Fake-Pops
8 ounces cream cheese, room temperature
1 package vanilla Oreo cookies
2 to 3 drops Peppermint extract
Green food paste
8 ounces white chocolate, melted
1. In a food processor blitz the cookies until they are crumbs. Add in the cream cheese, green food pasteĀ and peppermint extract and blitz again until a dough forms.
2. Roll the dough into balls and place them on a line cookie sheet. Refrigerate until they are fully chilled, at least 2 hours.
3. Melt the white chocolate in a bowl and dip the chilled balls in the chocolate to coat. Return them to the lined cookie sheet to chill until the chocolate has hardened. Serve!
