1 Minute Chocolate Biscoff Mug Cake
Earlier this week I shared 10 WAYS TO ENJOY BISCOFF {eleven if you counted eating it with a spoon} and now we have another one to add to that list. Yes, you guessed it a mug cake. A chocolate Biscoff mug cake. With all the craziness right now mug cakes are the perfect quick little indulgence. They take just a few minutes to mix together and this mug cake takes one simple minute to cook.
This mug cake boasts Biscoff in the batter, Biscoff in the middle and even crumbled on top for extra texture and crunch! It’s definitely a MUST for the Biscoff lover in your life!

Chocolate Biscoff Mug Cake
What you’ll need: {makes 1 mug cake}
4 tablespoons all purpose flour
4 tablespoons sugar
3 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg – beaten
4 tablespoons milk
2 tablespoon Biscoff spread – divided
1 Biscoff cookie – crumbled
What to do:
1. Into a small bowl add: flour, sugar, cocoa, baking powder, salt, egg, milk, and Biscoff spread. Mix to combine.
2. Pour mixture into a regular sized coffee mug. Drop remaining tablespoon of Biscoff spread into center of mixture.
3. Microwave on high for one minute. If needed {if cake batter is still gooey}, microwave on high for up to an additional 30 seconds. Garnish with crumbled Biscoff cookie.

sorry, but the original Dutch word is speculoos/speculaas. Ain’t nothin better than Lotus speculoos, yum!
