Peppermint Pudding Microwave Chocolate Peppermint Pudding in 5 Minutes!

I love a good creamy pudding but don’t always have a lot of time to make it. The other day I decided to try this quick recipe for pudding and added in some peppermint extract and a candy cane for a festive twist. Luckily this quick method worked and I had gorgeous silky pudding in my hands in five minutes flat. My daughter had a nibble too and enjoyed it. She asked me if next time I can make vanilla. I think it is doable and I’ll let you know how it goes!

Quick Chocolate Peppermint Pudding

1/2 cup white sugar

1/3 cup unsweetened cocoa powder

3 tablespoons cornstarch

2 cups milk

2 drops peppermint extract

1. Whisk together the sugar, cocoa, and cornstarch in a heatproof, microwave-safe bowl. Then whisk in th milk until completely incorporated.

2. Microwave the bowl on high for three minutes, then cook at 1 minute intervals for 2 to 4 minutes, or until thickened. Stir in the peppermint extract. Allow to cool and serve!
