Veggie Box Easy Stir Fry
We are still working our way through the CSA veggie box and all the vegetables look so tempting. Last night we were short on time for dinner so we came together as a family to cut up some veggies and create a tasty stir fry. The kids got a kick out of picking through the vegetables and deciding what should be included. This easy stir fry will be a perfect dinner next week when we are all too busy prepping for Thanksgiving. Get our simple-y delicious recipe after the jump…
Veggie Box Easy Stir Fry Recipe
1/2 onion coarsely chopped
3 celery ribs cut into 1/2 inch slices
2 carrots quartered and cut into sticks
1/4 head of cabbage sliced
1 head of broccoli cut into florets
2 green onions sliced
2 cloves garlic crushed
Yaki Soba noodles – we used 2 packs of precooked.
soy sauce to taste
1/8 teaspoon ground ginger
fresh ground pepper to taste
Toss the onion, carrot, celery, and broccoli into a wok or pan. Cook for about 5 minutes. Add the garlic, cabbage, green onion, ground ginger and soy sauce, cook for an additional 1 to 2 minutes or until cabbage is wilted slightly and other veggies are al dente. Toss in the yaki soba noodle and stir to combine. Add pepper to taste. Dinner is served, it’s as easy as that! Serves 4.
This would go perfectly with my healthy chicken potstickers!
