Slow Cooker Soup Recipes for Cold Days
Fall is CrockPot season – that time of year when slow cookers come out of hiding and are put back to work for the winter. It’s also soup season – when a warm bowl of something steamy hits the spot. If you can make that soup in your slow cooker and let it simmer all day, all the better. Here are some great soup recipes that can easily be made in the slow cooker – and how to adapt your own favourite recipes.
Fortunately, soup recipes are the most lax of any I know – you can generally wing it when you make a pot of soup, adding meat, veg, stock, anything you like – and simmering until it’s done. So most soups can be easily made in a slow cooker. Most of these recipes don’t call for slow cooking, but you can treat your slow cooker as the pot on the stove, and cook them on low for 4-8 hours. Pureed soups like potato-leek and butternut squash work particularly well, as you don’t have to worry about overcooking the vegetables. If you have a hand-held immersion blender, puree the soup right in the slow cooker! (If you don’t have one, it’s worth adding to your Christmas list!)
