I was recently cooking gluten-free, and needed a substitute for soy sauce, which contains gluten. I was out of tamari, but recalled seeing a recipe for homemade soy sauce somewhere. A quick search came up with several versions of essentially the same thing – beef broth simmered with cider vinegar, molasses and spices that simulates soy sauce surprisingly well.

Once this mixture has cooked down, you can keep it bottled in the fridge for a few weeks; it also freezes well for longer storage.

Hey Julie

I just came across your blog post and thought I’d send you a quick note about Little Soya Soy Sauce. We are a new company based in Houston, Texas, and we are changing the way America thinks about soy sauce.

Little Soya is a gluten-free, less-sodium soy sauce, in fact we have 45% less sodium than most of the leading brands already out on the market. We’ve heard from many of our fans that other gluten-free soy sauces don’t really capture the full taste of traditional soy sauce. Until now that is.

We would love to send you a sample of our soy sauce for you to try!

For more information feel free to email me back or check out our Facebook page at http://www.facebook.com/littlesoya.
