A Gluten-free Soy Sauce Substitute
I was recently cooking gluten-free, and needed a substitute for soy sauce, which contains gluten. I was out of tamari, but recalled seeing a recipe for homemade soy sauce somewhere. A quick search came up with several versions of essentially the same thing – beef broth simmered with cider vinegar, molasses and spices that simulates soy sauce surprisingly well.
Once this mixture has cooked down, you can keep it bottled in the fridge for a few weeks; it also freezes well for longer storage.
Gluten-free Soy Sauce Substitute
adapted from several sources, including Food.com
2 cups beef broth
2 tsp. cider vinegar
1 tsp. molasses
pinch ground ginger
pinch black pepper
pinch garlic powder
pinch onion powderCombine all ingredients in a small saucepan and simmer until reduced to 1/2 cup. Cool and refrigerate – shake before using.
