10 Ways to Eat Your Squash and Like it Too!

At the farmers market this weekend the stands were full of squash in all different shapes and sizes, colors and varieties. These thick-skinned beauties have arrived, and while I can’t help but be a bit sad to see the summer squash fade as the weather cools and the winds pick up, I do love a good squash dish to warm me up on cool evenings.
Squash used to intimidate me, with its hard flesh and gourd-like appearance. After all, those were things I spent my childhood painting and turning into seasonal decor, not things I cooked and ate. Slowly I embraced slow cooking, roasting, baking, boiling and turning these fascinating lovelies into dinners and desserts.
