Cookbook Giveaway: Good Bite Weeknight Meals Delicious Made Easy
One year ago 16 of the nation’s top food bloggers worked on an amazing project. The cooking website, Good Bite wanted to put together a cookbook that focused on simple yet delicious weeknight dinners featuring the recipes of those top bloggers. After a lot of hard work, the book was published and has been released for sale nationwide. Two bloggers from Babble’s Family Kitchen are featured in the book… Me… Laura Levy of Laura’s Best Recipes and Julie Van Rosendaal, publisher of Dinner with Julie. We’re very proud to be included with some of America’s best bloggers.
To celebrate the release of this beautiful color hardcover book, we are giving away FIVE copies of this beautiful book (winners selected by random drawing) … one representing each weeknight you’ll be using this book to cook up delicious yet easy dinners.

I make my own pizza dough and always keep a few in the freezer. We like to make different pizzas, like white pizza with artichokes & feta, BBQ chicken with caramelized Vidalia onions, Buffalo chicken, roasted veggie (zucchini, eggplant, onion, squash — whatever you like)…or sometimes just your typical Margherita pizza (with fresh basil, which we’ve been enjoying all summer!), which you can dress up with things like sliced meatballs or pepperoni.
The possibilities are endless and pizza is a great way to re-invent leftovers (especially leftover roasted chicken — BBQ, Buffalo, Teriyaki, etc.). Served with a large, fresh salad with lots of great veggie toppings and it can be a healthy meal.
My husband is diabetic (and I’ve lost almost 60 pounds), so I’m always looking for ways to serve things we love in a healthier way. There are no “bad” foods per se — just use moderation and balance in order to indulge in your favorites!

I use whatever juices or spices or sauces are on hand. It’s a different meal every time but the flavors always change. Or Yankee Pot Roast or Chili in the slow cooker. Or….. LOL

So simple!Make Basmati rice, brown or white.
Roast shrimp 7 mins @ 400 degrees with olive oil, s & p, chili flakes.
Stir fry your favorite veges for 5 mins. Keepn’ it crispy.
Add the shrimp into the veges.
Add alittle teriyaki or even hoisin sauce thinned with low sodium soy sauce. Place over rice in a bowl.
Top with chopped cilantro, peanuts and sesame seeds.
Yummy!
You can replace the rice with angel hair pasta too for a noodle dish!

My favorite weeknight “go to” meal is a home-made thin crust pizza topped with sauteed broccoli, onions, mushrooms, crushed red pepper flakes, tomato sauce and a light sprinkling of grated cheese, served with a small green salad on the side. My husband and I eat it practically every week! Occasionally we vary the toppings by including crumbled vegetarian sausage patties, cooked ground beef or left-over grilled chicken, but this veggie mix is our favorite “go to” combo.

Easy to pop in the oven from freezer, effortless cooking and pairs with pasta or rice or couscous or whatever is on the shelf. Or, put it on a bed of spinach, squeeze on the lemon juice and dinner is served. Simple, healthy and the kids will actually eat it!!

If I am in a funky mood it’s homemade mac and cheese, which i make in my rice cooker. If I am feeling nostalgic it is my grandfathers swiss steak.

Judy commented on Sep 11 11 at 2:04 pmOne of my favorite go to meals – Hot Waffles with whatever leftover meat is in the fridge just very slightly warmed (just enough to melt any risudal fat). the combo of hot fresh waffles and almost cold meat is great, sliced cukes and tomatoes in summer or pickles in winter completes the contrasting tastes and textures.

We use whatever, and as long as we put it in semi-careful layers, roll it up tight and cut it so it looks like fancy little sushi rolls, pretty much everyone loves it. We use chicken, turkey, cream cheese, salsa, peanut/almond butter, jam, eggs, cheese – anything, and a little bit of fresh fruit or veggies in there somehow brightens it up.

Joan commented on Sep 11 11 at 2:40 pmSounds like a great cookbook filled with inspiring things to cook. One of my favorite go to weeknight meals is homemade tomato soup. Hubby and son love it when I make it. It’s really easy and fast. I use a quart of my home canned tomatoes but you could use store bought canned. To that I had a hunk of butter and some black pepper. In a pint sized jar I mix either milk, 1/2 and 1/2 or heavy cream depending on extravagant I feel, about a cup of either, with about a 1/4 cup flour. I screw on the lid and give it a good shake or sometimes I whirl it up with my immersion blender. Then pour it into the tomatoes and butter and bring to a slight boil. Turn it down and let it simmer for a little while and enjoy. Hubby and son mix crackers and mayo in their bowl but I usually just eat mine plain or with a few crackers. Goes great with a grilled cheese.

If that’s not happening I like to get already-cooked meat (chicken, turkey, roast beef) from Harvest Market and add it to salad made of vegetables and leftovers. And the real, honest-to-goodness answer is crunchy peanut butter and grape jelly!

For winter, I love spaghetti – I have a sauce recipe that I cook in a large quantity and freeze it so when I need it, I have it ready! I usually have garlic bread and light romaine lettuce salad to go with it.

We throw a little spinach and some grated cheddar cheese on top, and cook them at 350 for 10 minutes. My husband splashes a little hot sauce on his for extra spice. Our 1-yr old loves them too!

Kelly Wilson commented on Sep 13 11 at 9:01 amI live in FL where seafood and shrimp are easy to get fresh. I’ll buy the shrimp in bulk, separate them into 1lb bags and then freeze them. My favorite go to meal is peel and eat shrimp, with homemade cocktail sauce (horseradish, ketchup, lemon juice and worcestershire sauce) and a fresh salad. Takes 15 minutes out of the freezer, it’s very healthy, and my family thinks its a treat!

Alecia Turner commented on Sep 13 11 at 10:13 pmVeggie tortilla roll ups. Any chopped fresh veggies and some shredded cheese on a tortilla spread with your choice of dressing, Blue cheese, ranch or ceasar dressings are all great on it, just roll it tight and cut at an angle and you’re good to go!

I make bread almost every weekend, so its easy to slice some up and brush with garlic and broil or grill. Quick and tasty!

But Spaghetti with ham and Gorgonzola cheese in a cream sauce is a fast and yummy crowd pleaser, too.

After preparing I add sun dried tomatoes and brussels sprout… a little olive oil… and sometimes crumbled feta. To drink: iced tea.. no matter if it’s cold or hot outside. I think I choose risotto is that as a base I can add almost anything, sometimes emptying the refrigerator or freezer to finish out the week because I’m usually too tired to go to the grocery store.

This summer was so hot we looked for anything to cook on the grill and ended up making many pizzas! Homemade dough and a million options for the toppings! Cooking them on the gas grill made it super yummy and kept my kitchen/house cool in this hot Texas heat!

I cut up the chicken breast and throw in some fresh veggies and mushrooms for a stir fry, and serve with some brown rice which I also make a big batch of on the weekends.

1)Pulled BBQ Chicken sandwiches. I love these because a)I always have the stuff on hand, b) you don’t have to plan since you can throw the chicken breasts in the crock pot frozen and c)we LOVE them and they taste different each time depending what I top them with:)
Throw 2-3 chicken breasts in a crock pot with an onion, cut into wedges, 2 minced garlic cloves and a can of Dr Pepper. Cook on med-low for 6 hours. Shred with fork and mix with favorite BBQ sauce. 2. Caprese Chicken. Basically I marinate chicken in italian dressing and italian seasonings all day in the fridge. Then I pan sear and bake for 12 mins at 500 degrees. I top with a thick slice of fresh mozzarella cheese, slice of tomato and fresh basil and drizzle balsamic dressing over the top. Healthy, amazing and great since I have tomatoes and basil in my garden… now if only I could grow a mozzarella plant! :)

I like to use whole grain or spinach wraps, a selection of cheeses, roasted veggies, cooked chicken, fish, crab legs or beef and any seasonings or sauces to jazz it up. Some examples are:
Seafood (crab and or shrimp, with scallions, swiss or provolone cheese, a dab of ranch dressing and some spinach)
Tex Chicken ( cooked chicken, roasted corn, spanish rice and a bit of hot sauce or taco sauce)
Greek ( any cooked meet, feta cheese, slivered onion and cucumber sauce)
Rib stickers ( Cooked chicken or beef, cheddar cheese, cooked hash browns with onions, dash of Worcestershire sauce)
Breakfast (cooked bacon or crumbled sausage, scrambled eggs, cheese and a dash of hot sauce)

Marinate chicken breast boneless skinless in good seasons Italian dressing and fresh basil. Then grilled on indirect heat till done. Golden on the outside and juicy inside. Serve with a pat of soft butter more fresh basil and a grate of pa cheese. Salad and maybe some rice on the side w a glass of chardonay. Winner every time

Cherry tomatoes and fresh basil are great in the summer. But if the vegetable bin is running thin and we’re still a day away from a trip to the market, then toss in some frozen broccoli instead. If any left-over grilled or roast chicken is available, that goes in, too.

We’ve got a variety of proteins and sides weighed out, flash frozen when possible, and individually packaged so that either of us can just come home, open the freezer, and pop something in the microwave, wok, skillet, or oven. Even 30-minute meals taste better after only 10 minutes at the end of a long, crazy day!

My got to menu on those nights comes in two parts, I try to pack some cubed cheese, and meat and some vegtables along with some homemade garlic croutons (easier to manage than crackers) when we get home I like to have something in the crockpot, one of our favorites is chicken breasts with a variety of vegtables, with the chill in the air we are using more root vegtables such as turnips and sweetpotatoes.

Sauté 2 big leeks, white and light green parts only, in a bit of butter until caramelized. Once all is done, let cool slightly then blend in the blender. Brown 2 chicken breasts then dice and put in soup. Serve with warm bread. Soooo yummy!!!

I start with a little olive oil, cook some “chunks’ of onion, potatoes and carrots. Then I add chunks of bell pepper (any or all colors) squash…both yellow and zuchhini…and any other vegetable that suits your fancy, along with bite-sized slices of Eckrich smoked sausage (with skin). A pinch of sugar makes the flavors pop. At the very end, I add some chopped cilantro and grape tomatoes. Everything tastes so fresh and yummy, yet it takes just a few minutes to make this colorful “confetti skillet”.

Teresa Steflik commented on Sep 15 11 at 8:52 pmOur favorite “go to” weeknight dinner is our version of Pollo Tropical’s chicken, white rice and beans “Tropichops” dish. Served in Pollo Tropical’s restaurants, this casserole-style bowl has 3-4 toppings: grilled chicken, black bean sauce, green pepper/onion/garlic topping, and a chunky tomato topping. Having to prepare these as separate side toppings was just too complicated on a weeknight. So we modified it to become a one-pot sauce.
I use the basic recipe for their black bean sauce on the back of the Goya Black Beans can (of course modified somewhat). First we saute chicken in garlic, saute onions with green peppers (or red, or yellow) with LOTS of garlic, and then add the black beans, petite diced tomatoes, chicken broth and seasonings (oregano, sazon, apple cider vinegar, salt/pepper, and sugar).
To speed up prep time, I’ve used pre-sliced peppers (into julienne strips) that I’ve frozen. The chicken is also cut into thin strips (about 1-1/2″ long, but fairly thin – about 1/4″ thick). I also start the black beans, tomatoes, chicken broth and seasonings in a large pot. I use a different saute pan to cook the chicken, onions, peppers, and garlic and after they are cooked, they are added to the pot with the black bean sauce.
By the time it simmers down to thicken the sauce, the rice is cooked and dinner is served! It is so good, we will gladly eat it for lunch the next day or two!!

* Halved Chicken Breast placed on tin foil lined cookie sheet.
Roast at 375 degrees for 35-45 minutes.
*Use Olive Oil to drizzle on both chicken and vegetables.
* Fresh Provencal Herbs finely chopped for both chicken & vegetables.
* Large Yellow Onion cut in to (1″ chunks)
* Red Bell Pepper cut in to (1″ chunks)
* Zucchini cut in to (1″ chunks)
* Yellow Squash cut in to (1″ chunks)
Place vegetables in a Non Stick Grill Topper/Basket
Season and cook on grill on medium heat for 15 minutes tossing regularly.
Remove and enjoy!

He makes up a large batch of Marinara and freezes it in small bags then pulls it out for the pizza.
We use fresh basil or rosemary, goat cheese or fresh mozzarella then mushrooms, red onions, roasted chicken or pancetta.
SO good!!

I add whatever I have in the refrigerator: veggies, chicken, meatballs, fresh tomatoes, herbs. About 45 minutes for pizza dough to thaw, 10 minutes in the meantime to prep veggies, 12 minutes to bake in a 500F oven. Add cheese if you wish and a yummy dinner! Complete!

Eggs, sauteed vegetables (freshly made or leftover), cheese, herbs and spices all prepared in one pan! The combinations are endless so the dish is never the same twice. Serve it with some whole grain toast and your done. A great meal that’s quick and easy and tastes great every time!

Easy to make, not so pretty, but delicious. I fry thin sliced potatoes with chopped onion & green pepper, When just about done I toss in whatever I have..cubed ham, sliced hot dogs, kielbasa or it’s really good with cubes of spam. Brown the meat a little & then pour beaten eggs over top. Once the eggs are set, dinner is ready. Good anytime of day! I’ve made so many variations of this even using leftover baked potatoes, fried or red roasted peppers in a jar, whatever you have.

Either grill it on the barbeque or heat in a little water, drain and brown on the stove. Slice the sausage and set aside In the meantime, saute a little onion and garlic in olive oil (and a little butter depending on the veggie and mood). Add some broccoli or zucchini or tomato or whatever else suits your fancy and/or you have on hand and cook until crisp tender or heated through in the case of the tomato. Cook some pasta..whatever seems appropriate, keep about a cup of the cooking liquid when it’s ready to be drained. Toss the pasta with the with sauteed veggies and the sausage. Add some cooking liquid if necessary and, of course, grated Parmesan or Romano. Season with salt and pepper as you go.

I almost feel like I’m cheating because everyone raves about it, but it’s so fast, easy and economical: Saute a med. onion in olive oil, adding 1 lb. ground sirloin (crumbled; or sub with ground turkey or whatever you’d prefer), 1 Tbs mild chili power, 1 tsp. cumin powder, salt, pepper, and any “heat” your family will enjoy (to taste), then 1 lg can plain tomato sauce, 1 lg can diced tomatoes, and your choice (and amount) of canned beans (I use 1 lg can kidney beans and 1 sm can black beans). That’s it! Rarely do I get leftovers with this recipe.

If you can make them happy, ya know you have a winner. Depending on what everyone is in the mood for, you can either just have a salad with it or heat up your vegetable of choice. A nice addition is garlic or cheesy bread also. Leftovers the next day are pretty yummy too!

It’s healthy, low calorie, low carb and I can get creative every time so it never gets boring. Simple and wholesome meals are easy too cook if one uses a little imagination. My husband always says..”Remember how you made this…” Uh oh. LOL

However, my close second is your Tomato Creamy Pasta, although I add a few more veggies and exchange Half-and-Half for the Heavy Cream (MOST ot the time). GOOD STUFF!

Preheat home to Warm and Welcoming
INGREDIENTS:
1 surprise visit from away-at-college child (more can be added to taste)
A splash of joyful tears An earful of screams of delight
A pinch of silly pinches A heaping scoop of love
An armful of loving hugs A kiss of kissesMix first 5 ingredients together rapidly and set at table to settle.
After 5 mins SLOWLY add scoop of love- (do not agitate by pouring it all on at once!)
Bake in a dusted- with-memories-round of laughter until edges of the moment begin to crisp.
You’ll know it is done when gently poked with your finger it lets out a sigh.
Sprinkle lightly with kisses.Serve and enjoy right away.
This is a wonderful meal that I only get to serve on rare occassions but each one seems to be enjoyed even more than the one before.

We grill extra chicken when we make it on the weekend or pick up a grocery store rotisserie chicken. Fresh spinach, chicken, slivered almonds and/or sunflower seeds, boiled egg, Craisins, sometimes some bacon bits, the Spinach Salad dressing from the refrigerated section near the pre-bagged salads (it’s low fat!) and croutons. A huge hit with hubby and my 7-year old enjoys it too!

While these are best warm (oooh the crispness of the olive oil browned tortilas!), parchment paper and foil makes these this soccer mom’s go to dish even on the go!

I keep homemade tomato sauce in the freezer, line a pan with good frozen ravioli, sauce, cheese and bake. Spending on the time of year I add roasted veggies, Turkey sausage, etc. So easy and the ravioli absorb some of the tomato and cook up perfectly!

For a veggie I saute very thinly sliced (on the mandolin) zuchinni with a little butter spray, top with kosher salt and cracked pepper and lemon thyme fresh from my herb garden. Perfect meal. Feels special but super ez!

In the winter it’s grilled cheese with tomato soup. Hopefully we have some soup on hand made from our garden tomatoes. It freezes really well. We make the grilled cheese with just about any cheese we have in the house (Havarti, Gouda, Swiss, Cheddar, etc.).
Our other favorite is pasta (or frozen ravioli or tortellini) mixed with a can of Italian stewed tomatoes and half a jar of Alfredo sauce. It makes a wonderful creamy red sauce. Then we warm up some frozen garlic bread, maybe add a salad, and there’s dinner in about 20 minutes. Yum!

I buy the raw, peeled, larger shrimp, and toss them while still frozen into the boiling salted water with the fettucine noodles, and then top with prepared pesto sauce. Stir together until noodles and shrimp are coated, sprinkle with parmesan, and serve with some crusty bread! A huge favorite at my house!

Whenever any one of them is home…they always request a meal that we’ve had at least once a week for 40+ years (and even some of their friends will come over and request it!). Taco Night at the Gilbertsons! We use all fresh ingredients (except the tortillas, which I purchase at the grocery, both corn and flour ones) and we’ve served variations of beef, chicken and fish. Over the years, my husband and I have stopped frying the tortillas for ourselves (he warms his in the microwave and I prefer warming over the gas stove…or doing without one altogether and just calling it a taco salad with NO tortilla). But the kids still like the greasy fried version that Dad has always made. We have freshly grated cheese, tomatoes, avocados, green peppers, red onions, (for fish we have a slaw of cabbage, cilantro, radishes and lime juice). For the chicken and beef versions, I use roasted chili peppers, garlic, salt, cayenne, cumin and cilantro to spice the meats. TACOS….once a week for 40+ years. I ‘d say it’s our favorite week night meal!

So weeknight dinners always are an interesting experience of what I think of off the top of my head. Recently I have enjoyed a broccoli cauliflower soup with cheese, chicken stock and curry in it. I can prepare everything ahead of time and toss of together fast, or if time permits, simmer it for a long while so it tastes even better.
