Chipotle Burgers
I hope everyone had a wonderful labor day. The last unofficial day of the summer was a great grilling day for us, but sadly may be our last with our old grill. The bottom has rusted out again for the third time, so instead of continuing to repair it (it also has unsteady old legs), we’re in the market for a new one. We’ve always had charcoal, and we’d like to replace it with another charcoal grill, but the lazy part of me wants a gas grill. Maybe after some shopping around we can find a grill that suites our needs.
Yesterday I made these easy chipotle burgers on the grill. They were so good, and did I mentions easy? It’s only 4 ingredients for a wow burger. These are amazing on the outdoor grill, but would also be good on an indoor grill or in the skillet.
Chipotle Burger Recipe
Ingredients
for the burgers
2 lbs ground beef
1/4 cup canned chipotle chiles (chopped) in adobo, including sauce
salt and pepper or grill seasoning
for the chipotle mayonnaise
2-3 chipotle peppers, finely chopped
1/2 teaspoon adobo sauce
1/2 cup mayonnaise
other ingredients
lettuce
tomato
onion
hamburger buns
Instructions
1. Combine all ingredients for chipotle mayonnaise and mix well. Set aside.
2. Preheat grill or skillet. Combine ground beef with chipotle chiles and adobo sauce. Mix with hands and form into 1/2 lb patties. Salt and pepper patties on each side. Cook on each side until desired doneness.
3. Toast hamburger buns and slather with chipotle mayonnaise. Add burgers, lettuce, tomato and onion. Serve with chips or fries.

Tara commented on Sep 06 11 at 2:16 pmSounds delicious, however I’m always disappointed when I see recipes requiring adobo sauce. Can’t buy that in many countries–if any outside the US. Any substitutes?
Angie McGowan commented on Sep 09 11 at 9:52 amYou could try a bit of any bottled hot sauce mixed with any steak sauce. That will give a spicy and tangy flavor similar to chipotles and adobo.

Howell commented on Oct 08 11 at 11:23 pmI can’t wait to try these’s We grill all year long here in the south.If like us you purfer the charcoal grill, when you buy your new one have someone who works with metal and have them make you a titanium tray to put in the bottom. Your grill,or at least the tray will last forever.
