Homemade Cheddar Goldfish Crackers
I couldn’t help myself, I just had to give these a try. I mean, who doesn’t love goldfish crackers? Yes, they are generally easy to find and are inexpensive, but the homemade ones are far more natural and tastier. I don’t have tiny goldfish cookie cutters so I made larger goldfish instead. They were more like large Ritz cracker sized goldfish. This recipe came together very quickly and easily was a huge hit with my daughter who loved them as her after camp snack. Next time I think I have to try making pizza flavored!
Homemade Cheddar Goldfish Crackers
adapted from Country Living
1 cup all-purpose flour
4 tablespoons cold unsalted butter, cut into pieces
8 ounces grated extra-sharp Cheddar cheese
1/2 teaspoon salt
½ teaspoon ground pepper
1. Pulse the flour, butter, cheese, salt and pepper together in a food processor until the mixture resembles a coarse meal. Pulse in 3 to 4 tablespoons of water, 1 tablespoons at a time until a ball of dough forms. Wrap the dough in plastic and chill it for at least 1 hour.
2. Preheat the oven to 350F. Roll the dough to 1/8 inch thickness and cut out as many crackers as possible. Place them 1-inch apart on prepared baking sheets and bake until crisp, about 15 to 20 minutes. Cool the crackers on a wire rack and serve!
