Easy Double Blueberry Pie
Fruit pies are my dessert of choice during the summer months – it’s a shame making one from scratch can be so intimidating to so many. This blueberry pie is great for beginners – low in sugar and with just three ingredients in the filling, it can be made with a homemade pastry shell, but store-bought is perfectly acceptable too. Because as someone once said – the very best kind of pie is the kind that’s on your table.
I love that this pie is low in sugar, high in berries – one cup of blueberries is just 80 calories and contains 3.6 grams of dietary fiber. And blueberries ranked number one in antioxidant health benefits in a comparison with more than 40 fresh fruits and vegetables. Anthocyanin -the pigment that gives blueberries their distinctive colour, is the same compound that provides the blueberry’s amazing health benefits.
If you can’t find blueberry jam or fruit spread, raspberry would be a perfectly fine substitute – raspberries and blueberries go deliciously together.
Easy Double Blueberry Pie

1 cup blueberry jam or fruit spread
1/4 tsp ground cinnamon
4 cups fresh blueberries
1 baked pie shell
Sweetened whipped cream or vanilla ice cream, for serving (optional)In a microwaveable dish, combine blueberry jam and cinnamon. Microwave on high until mixture liquefies, about 1 minute. Stir in fresh blueberries.
Spoon blueberry mixture into prepared shell. Chill. Serve with whipped cream or vanilla ice cream.
