Last week I posted the Brownie Cup with Mini Peanut Butter Cups and they were such a hit that my daughter decided we should bake her favorite chocolate into a brownie.  My girl has a major sweet tooth and cannot resist anything with chocolate and caramel so we headed off to Trader Joe’s for a pack of their dark chocolate covered caramels.  Get the how to after the jump…

We used the same recipe as the peanut butter cup brownie, just added chocolate caramels instead!

Brownie Cup With Mini Peanut Butter Cups Recipe

1/2 cup butter or 1 stick softened

1/4 cup plus 2 tablespoons of vanilla yogurt

1 1/2 cups sugar

1 teaspoon vanilla

3 eggs

3/4 cup cocoa

1/2 cup all purpose flour

1/2 cup whole wheat flour (or 1/4 cup almond meal and 1/4 cup whole wheat flour)

1/2 teaspoon baking powder

1/4 teaspoon salt

container of dark chocolate covered caramel or 16 to 24 pieces. Any brand will work, we used Trader Joe’s.

Preheat oven to 350 degrees F.  Grease 8 ramekins or a 12 cup muffin pan.  Mix the butter, yogurt and sugar.  Add vanilla and egg.  In a separate bowl combine the dry ingredients and slowly pour into the mixer to form a batter.  Pour just enough batter to cover the bottom into each ramekin and place a chocolate caramel in the cover with more batter until halfway and place another chocolate caramel on top.  Bake for 15 to 20 minutes or until the top bounces back.  Serves 8 or 12.
