Perfect for Back to School: “Apple” Pocket Pies
School is just around the corner and I’m already thinking about their lunches. We’re a lunchbox family so I’m always looking for new things to put into my children’s lunchboxes. Pocket pies, or hand pies are a wonderful sweet treat to finish off their meal. I was gifted an adorable APPLE Pocket Pie Mold and I know I’m going to be putting it to good use. You can put any filling in that you like. We’ve already tried apple and peach {pictured above}and loved them both. You can use fresh fruit fillings or even a premium pie filling. They would also be great with savory fillings {ham and cheese please} Same goes for the crust. You can make your own, or use store bought.

“Apple” Pocket Pies
What you’ll need: {makes 5 pocket pies}
1 box refrigerated pie crust {2 discs}
21 ounces premium pie filling of your choice
1 egg – beaten, for egg wash
turbinado sugar – to dust
What to do:
1. Preheat oven to 400 degrees. Cut out 4 “apples” from each dough disc. Gather remaining dough, roll out and cut 2 additional “apples”.
2. Place one “apple” into form. Spoon in a few tablespoons of pie filling {careful not to overfill}. Place a second “apple” onto reverse side of mold. Using a pastry brush, lightly brush edges. Fold mold together and press tightly to seal. Transfer completed pocket pie onto a rimmed baking sheet lined with a silicon mat or parchment paper. Continue until all pies are complete.
3. Lightly brush tops of pocket pies with egg wash. Sprinkle sugar on tops. Bake for approximately 15 minutes or until golden and bubbly.
