Gwyneth Paltrow Cooking Series #18: Easy Vegan Deli-Style Cole Slaw
I have to admit, I usually buy cole slaw. I know it is easy to make, but, in my mind, it is just as easy to buy so why not do that instead? I’ll also admit that since I rarely make it I have never taken the time to find a recipe for it that I really like. When I saw Gwyneth’s recipe for it I knew it was time to give it a try. I already had some cabbage in the fridge and the rest of the ingredients were easy enough to procure. I even followed her instructions precisely and used Veganaise. I am not a huge mayonnaise fan so I was hoping that this might prove a worthy substitute and I think it actually was. The taste was slightly different than mayonnaise, but no less creamy. Whipped together with the vinegar it gave the slaw the smooth taste and texture I associate with deli fare and proved a worthy side dish to our (very un-vegan) burgers. I think this recipe is going to stay with me now. I am pleased with Vegenaise and plan to use it in more dishes, too.
Vegan Deli-Style Cole Slaw
2 cups grated green cabbage
1/2 carrot, peeled and coarsely chopped
1/2 cup vegenaise
2 teaspoons apple cider vinegar
2 teaspoons granulated sugar
Place the cabbage in a large bowl and toss with a pinch of salt. Allow to sit for 10 minutes. Add the carrot, vegenaise, vinegar and sugar and stir well. Allow to sit for at least an hour before serving.

I have a similar recipe with rice vinegar and I vary adding toasted walnuts/pecans, dried cranberries/dried cherries, sunflower seeds or using broccoli slaw. And it is terrific ON any kind of burger/sandwich. I’m glad you tried and liked Veganaise, it is a great substitute that I think is actually better than mayo, it is a staple in our house.
