No-Fuss Blackened Fish Sandwich
I love a good fish sandwich. Especially after a long day at the beach in the summer. For some reason that’s usually what I’m wanting after a beach day…must be the salty ocean air that triggers the craving?
This blackened fish sandwich can be cooked up in a flash. Beach or no beach, it’s a quick easy dinner to put together during a busy weeknight or on a lazy weekend day. It’s no fuss and a great way to cook fish, especially if cooking fish tends to intimidate you.
I use my favorite blackening seasoning, Chef Paul Prudhomme’s Magic, which I discovered after eating an amazing grouper sandwich in a St. Thomas restaurant years ago. It’s full of flavor without a ton of heat, it’s just right. The cilantro lime mayonnaise brightens up the sandwich and makes plenty for you to experiment with in other dishes.

Blackened Tilapia Sandwich with Cilantro Lime Mayonnaise
Recipe adapted from Paula Deen
4 tilapia filets (I used frozen tilapia from Costco, defrosted)
Blackened Redfish Magic seasoning
non stick spray
fresh kaiser rolls
1 cup mayonnaise
1/4 cup freshly chopped cilantro leaves
1/2 teaspoon lime zest, optional
1 tablespoon fresh lime juice
Pat dry each fish filet with a paper towel. Sprinkle seasoning liberally (or lightly, based on your taste) on each tilapia filet. Place each piece of fish into hot pan sprayed with non stick spray. Cook fish until flaky, approximately 3-4 minutes on each side.
For mayonnaise, combine all ingredients in small bowl. Cover and chill.
Serve tilapia on kaiser rolls with a schmear of cilantro lime mayonnaise and your favorite side dish!
