Chevre Stuffed Sweet Peppers

Stuffed Peppers 003 533x800 Chevre Stuffed Sweet Peppers

These stuffed sweet peppers will impress your guests at your next get together. You don’t even have to tell them how incredibly easy they are to whip up if you don’t want to. They’re elegant and over the top flavorful. Not to mention incredibly beautiful. The colors just pop off the plate practically daring you to try to eat just one ; ) I know I can’t. They’re the perfect sized bite and can even be prepared well ahead of time!
Chevre Stuffed Sweet Peppers
What you’ll need:
1 pint assorted color sweet peppers – cut in half, seeded
extra virgin olive oil
4 ounces Chevre goat milk cheese – room temperature
fresh thyme

What to do:
1. Preheat oven to 350 degrees. Place peppers onto a rimmed cookie sheet {or cake pan}. Drizzle with enough olive oil to lightly coat. Bake peppers for approximately 4-5 minutes until softened. Set aside until cool enough to handle.

2. Carefully spoon chevre into each pepper. Continue until all peppers are stuffed.

3. Sprinkle fresh thyme on top of peppers and a drizzle of olive oil.

I make this, but mix some dill into the goat cheese first. So good.
