It is strawberry season again and I am back at my usual preserving, freezing and canning routine. Don’t forget to read my post about Strawberries 101 to be reminded how to do all these things! One of my favorite things is to preserve strawberries in syrup and this year I pumped mine up with some delicious tahitian vanilla bean simple syrup. It is so easy to make and delicious to have in the pantry all winter long. I love to open a jar in th middle of winter and drizzle some over fresh ice cream or cheesecake for a great dessert! They can also be stirring into pitchers to flavor delicious winter punches!

Strawberries in Tahitian Vanilla Bean Simple Syrup

2 cups fresh strawberries, washed, dried and hulled

1 1/2 cups water

1/2 cup sugar

1 large tahitian vanilla bean, slit open.

1. In a small saucepan over medium heat add the sugar, water and vanilla bean. Heat the water without stirring until the sugar has dissolved. Remove from the heat and allow to cool.

2. Pack 3 or 4 mini-pint jars with the strawberries. Fill each one with simple syrup and seal with lids and rims. Process in a hot water bath for 10 minutes and place in a cool place to dry and seal.
