Raspberry Watermelon Lemonade
During the summer, I’m always on the lookout for interesting drinks that aren’t powdered mixes or slurpees. Lemonade, of course, is classic – but I’ve become hooked on those spiked with other summer fruits, like watermelon, strawberries and cherries. This brilliant combo is like summer in a glass – watermelon, lemonade and fresh raspberries come together in perfect harmony in the blender. To fancy it up, serve in a tall glass, with a raspberry slid onto the straw.
The high water content of watermelon makes it a perfect candidate for blending into something drinkable. You could, of course, get creative and mix and match berries – ripe strawberries would work as well, or blackberries. If you want a clear ‘ade, strain the finished mixture through a sieve and discard the pulp. For a slushier version, freeze the watermelon cubes first.
Raspberry Watermelon Lemonade
6 cups seedless (or seeded) watermelon cubes
1/2 cup raspberries
1 cup water
1/3 cup sugar or honey (or to taste)
1/2 cup lemon juicePlace watermelon, raspberries and water in a blender, cover and blend until smooth. If you like, strain through a fine mesh strainer into pitcher – I like to leave the pulp and fiber in, giving it more of a smoothie/slushy texture. Stir in sugar and lemon juice until sugar dissolves. (Alternatively, heat the sugar and lemon juice in a small pot on the stovetop until the sugar dissolves, then cool and add it to the watermelon mixture.)
Refrigerate until chilled, about 1 hour. Makes 4 servings.
