Red White & Blue Watermelon Sundaes
Here’s a healthy and delicious last-minute Fourth of July dessert idea – refreshing “sundaes” made with watermelon balls and blueberries. Assemble them right before serving and top with a dollop of whipped cream or plain yogurt. Red, white and blue star sprinkles add a festive touch. (You could also get this same effect with small scoops of raspberry or watermelon sorbet and vanilla ice cream, scattered with fresh blueberries.)
Use a melon baller to get perfectly round scoops from your watermelon, then use the scraps to make a creamy watermelon smoothie or watermelon sorbet.
Red White & Blue Watermelon Sundaes

4 cups watermelon balls
2 cups fresh blueberries
1 cup sweetened whipped cream or thick plain or vanilla yogurt
red, white and blue star sprinklesGently mix together the watermelon and blueberries. Divide among 4 sundae bowls. Top each with a dollop of whipped cream or yogurt and sprinkle with red ,white and blue sprinkles. Serve immediately.
Serves 4.
