Fourth of July Whoopie Pies!
The Fourth of July is a time for serving up all kinds of red, white and blue treats. This year I wanted to go all out American and make whoopie pies in bright colors. So instead of the traditional chocolate I used vanilla as sort of a canvass for bringing out the vivid colors. Just look at that bright red and blue (ok, turquoise). Not only are they eye popping they’re gut popping because you won’t be able to stop putting them in your mouth. And for an added bonus the kids get a kick out of mixing the food colors and watching them get brighter and brighter.
Whoopie Pies Recipe
For the cake batter
- ½ cup butter (I use salted)
- ½ cup sugar
- ½ cup brown sugar
- 1 egg
- 1 cup buttermilk
- 1 teaspoon vanilla
- 2 Cups all purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon baking powder
For the Filling
- 2 cups marshmallow cream
- ½ cup confectioners sugar
- ¼ cup unsalted butter
- 1 teaspoon vanilla
Preheat the oven to 350 degrees.
For the cake batter: Mix the butter and sugars in an electric mixer until fluffy. Whisk together the flour, baking powder and baking soda in a separate bowl. Stir the vanilla and buttermilk together in a measuring cup with a spout. Turn the mixer on low and slowly add a little of the flour mixture, then a little of the buttermilk until it is all combined. Divide batter into two bowls and add desired food coloring – I used about half of a .3 oz bottle. Spoon a large tablespoon mound onto a parchment lined cookie sheet about 2 inches apart. Bake for 10 minutes and check if the bounce back when touched, if not cook for another minute or so.
For the filling: Beat marshmallow cream, confectioners sugar, butter, and vanilla until smooth.
Place a spoonful of filling onto the flat side of one of the cakes and top it with the opposite color.
Makes about 10 whoopie pies.
