Summertime Salad: Tomato Basil Bean
Here’s an easy summertime salad recipe with lots of healthy flavor. Beans, fresh basil, summertime cherry tomatoes, balsamic vinegar and extra virgin olive oil create a light and zesty salad perfect for lunchtime. Summer tomatoes can’t be beat. I used sweet yellow cherry tomatoes for this salad – but you can use whatever tomatoes are freshest at your store or Farmer’s Market. Cherry tomatoes work well because they have a hearty bite and a sun-kissed sweet flavor.
Use a good rich balsamic for this salad. Something with a bit of body. The basil should be fresh and fragrant.
When you have amazing ingredients for this salad – the simplicity works deliciously.
Summertime Salad: Tomato Basil Bean Balsamic
2 cups cherry tomatoes, quartered
1 1/2 cups beans – any variety (I used garbanzo)
1/4 cup fresh basil, chiffonade
1/4 cup balsamic vinegar
fresh black pepper
2 Tbsp of EVOO
1/2 cup red onion, diced
Directions:
Toss well and serve.
Serve immediately.
Garnish: basil
