We love going to food festivals, fairs and carnivals. It’s something fun for everyone in the family. While there we inevitably come across some very interesting eats. I’ve come to realize that they’ll fry just about anything at a festival, including a candy bar. I had my first taste of a deep fried snickers bar at the Mount Olive Pickle Festival {yes they had DEEP FRIED PICKLES there too}. Now, this isn’t something I’d eat all the time but on a special occasion absolutely!

Instead of using a full size candy bar I used the bite sized {or party sized} snickers bars and they were just the right amount. A few tips: be sure that the after you’ve inserted your candy sticks into the bars that you freeze them until they’ve hardened {otherwise it’s going to be one giant melted blob of chocolate}

Deep Fried Snickers Bar
What you’ll need:
snickers bars
batter:
1 1/2 cups whole milk
2 eggs – beaten
1/4 cup vegetable oil
1 teaspoon salt
2 teaspoons sugar
2 teaspoons baking powder
1 1/2 cups all purpose flour
1 cup cornmeal
vegetable oil – enough to fry

What to do:
1. Vertically insert candy sticks half way into desired number of snickers bars. Place candy bars onto a baking sheet/plate lined with parchment paper/silpat and place in freezer until candy bar hardens.

2. Place enough vegetable oil into a deep sided frying pan {or deep frying machine} and heat to 375 degrees. I use a candy thermometer to monitor my oil temperature.

2. Into a large bowl add: milk, eggs, 1/4 cup vegetable oil. Whisk to combine. Set aside.

3. Into a separate bowl add: salt, sugar, 1 1/2 cups flour, cornmeal and baking powder. Whisk to combine. GRADUALLY add flour mixture to wet ingredients. Mix until well incorporated.

4. Dredge frozen candy bars in batter mixture. Tap off excess.

5. CAREFULLY place battered candy bars into the hot oil. Do not crowd pan. Cook until golden. Turning {I find chopsticks work well} so it’s evenly browned on all sides. Transfer candy bars to a plate lined with paper towels to absorb excess oil.
