Classic Cobb Salad with Red Wine Lemon Vinaigrette
Classic cobb salad is one of those perfect older salad recipes that is often forgotten. This salad is credited for being invented in the 1930s at the Hollywood Brown Derby restaurant. It later became their signature dish. It’s a great filling main dish salad full of bacon, eggs, cheese and chicken. For my recipe, I added lemon in the dressing to give it a brighter flavor. To make the chicken really special I cooked it in the leftover bacon fat. It’s was so good, even though not so healthy. For a lower fat option, you could just grill your chicken on an indoor or outdoor grill.
Classic Cobb Salad with Red Wine Lemon Vinaigrette

one large head of romaine or iceberg lettuce
2 lbs chicken breasts, grilled or cooked in leftover bacon grease and chopped

1/2 red onion, diced
2 large tomatoes, diced

1 teaspoon lemon zest
the juice of 1 lemon

Katie@HealthnutFoodie commented on Jun 08 11 at 11:00 pmOh my! You should never say that cooking chicken in bacon fat is unhealthy! When chicken fed non-gmo grains are seared in uncured, antibiotic-free, pastured pork, this recipe can be a gorgeous medley of healthy fats and great flavor! Awesome job! http://healthnutfoodie.blogspot.com

ONE THING, your print feature needs to be fixed. I clicked on print and it printed out 7 pages, full of ads, pictures, comments and the recipe on 3 different pages. That was before I canceled my printer, who knows how many total pages were in the queue.
