Gwyneth Paltrow Cookies Series #7: Grandad’s Best Peanut Butter Cookies
In My Father’s Daughter Gwyneth clearly states she is more of a cook than a baker. Being a baker myself I was still curious to try a few of the baked dessert recipes that she wrote. The first one that caught my eye were these peanut butter cookies. I completely adore peanut butter cookies and I wanted to give these a try. I liked the idea that they contained both dark and light brown sugar as well as peanut butter chips. I even did as Gwyneth suggested and rolled the dough in sugar before baking them. It gave the cookies a nice crunchy exterior that complimented the soft, chewy interior. My batch yielded about 24 large-ish cookies and they were seriously gonzo in less than two days. Gwyneth notes that this recipe is her Grandad Danner’s. He must have been the baker in the family because these cookies are seriously excellent.
Grandad Danner’s Peanut Butter Cookies
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 pinch kosher salt
1 stick unsalted butter, room temperature
3/4 cup smooth peanut butter
1/2 cup packed dark brown sugar
1/2 cup light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup peanut butter chips
1/4 cup granulated sugar
1. Preheat the oven to 350ºF.
2. Whisk together the flour, baking soda, baking powder, and salt in a small bowl and set aside.
3. Cream the butter, sugars and peanut butter in an electric mixer. Add in the egg and vanilla. Then turn the mixer to low and slowly add in the flour until just incorporated. Finally, stir in the peanut butter chips with a wooden spoon.
4. Form the dough into large balls the size of golf balls and roll them in the granulated sugar. Press them down slightly with a fork to make checkerboard marks. Bake them for about 12 minutes or until they are set and the edges are slightly golden.
