Espresso Brownies Two Bite Espresso Chocolate Chip Brownies

A few years ago I went on a tear adding espresso powder to nearly every baked good I could. Cookies, cakes, brownies, you name it, I tried it. Out of all those experiments came my Two Bite Espresso Chocolate Chip Brownies. Simple and delicious, these brownies are the perfect treat for anyone looking for a quick chocolate bite with a tiny boost of caffeine. I don’t recommend giving these to children, unless you want them up all night long! Also, keep in mind that this brownie recipe can be made in a regular brownie pan or without the espresso powder for plain chocolate brownies.

Two Bite Espresso Chocolate Chip Brownies

1 box brownie mix for a 8×8 pan

1 tablespoon instant espresso powder (make sure it is instant!)

1/2 cup mini-chocolate chips

1. Preheat the oven to 350ºF.

2. Prepare the brownies according to package directions and add the chocolate chips and espresso powder to the batter.

3. Line 8 cups of a 12-cup muffin tin with paper liners. Divide the batter evenly amongst the muffin cups and bake them for 25 minutes, or until the tops spring back when touched.
