Good Breakfasts: Brown and Wild Rice Pudding
I do adore oatmeal. I’m hooked on the creamy graininess of it first thing in the morning – but when the weather turns warm, I’m less inclined to start the day with something steaming. (Besides my coffee, of course.) In spring and summer I love yogurt and granola in the morning, or muesli, or chilled rice pudding made with brown and wild rice for added nutrients and fiber. It’s great to have something good for you ready to go – just scoop out a wee bowlful whenever you need something to nibble on.
Brown & Wild Rice Pudding with Dried Cranberries
3/4 cup wild rice
3/4 cup brown rice
3 cups milk
1/4 cup packed dark brown sugar (or to taste)
1 tsp. vanilla
1/2 cup dried cranberries, raisins or chopped dried apricotsCombine 5 cups of water, the wild rice and brown rice in a medium saucepan set over medium-high heat, and bring to a boil. Reduce the temperature to a simmer, cover and cook for 50 minutes, until very tender. Drain and return to the pot.
Add milk, sugar and vanilla and cook on medium-low until almost all the milk has been absorbed. Taste and add more maple syrup, if it needs it. Remove from heat and stir in the cranberries.
Cool completely, then refrigerate either in the pot or spooned into individual bowls. Serves 6.
