My daughter turns eleven tomorrow and I was trying to conjure a fun, simple surprise to accompany her school lunch. After rifling through the cupboard, I landed on an idea for a Rainbow Sprinkle cake, packed in a jar with colorful frosting, and toted off to school with my little birthday girl. This recipe is a fun, quick way to serve up birthday cake to those you love. To keep the cake soft and colorful, it’s baked first, then crumbled into four small canning jars. Tint the frosting any color you choose; we went with bright pink and blue because that’s what my girl happens to adore. Bright colors and birthday surprises. Looks like she scored big this year on both counts.

Birthday Cake in a Jar

  • 1 yellow cake mix, prepared according to package directions
  • 1/4 cup rainbow sprinkles
  • 1 jar vanilla frosting, tinted into two colors

Stir the rainbow sprinkles into the prepared cake mix. Bake according to package directions in a 9×13 baking dish. Once the cake is cooked and cooled, tear it into large, crumbly pieces.

Assemble the birthday cake in a jar by placing a small amount of cake into the bottom of four small canning jars. Top with one color of frosting, a bit more cake, and the second color of frosting.  Top each jar with a seal and lid. Store in the fridge for up to 2 days.  Serve with candles and a lot of birthday wishes.

Want to send your cake via snail mail? Feel free to pack it tightly and pop it in the mail, but you’ll want to make sure it arrives at your destination within 3 days for maximum freshness.

Thats amazing!! Today is my annaversary and I have cake,frosting,and a jar….Its going to blow is mind when I give to him latter…Thanks for the awsome idea!!

You can actually bake small cakes in the jars. Look on line for some ideas.

I am wondering how do you get these out of the jars to eat? Is that a silly question? They are a great idea for something different & doesn’t cost a fortune, for this old retired body, ha!
I’ll take any info you girls can give me.

I find it so weird that everything seems to come in packet mixes and jars! I keep seeing things that I’d like to try but when I go to the recipe it includes all these things we don’t get over here in England, it’s not so hard to make a cake and frosting though so I may just do it anyway!

I’ve baked the cake IN the jar, and while it was hot pressure sealed it, sent it overseas to my deployed husband and his friends with containers of frosting and forks. It took a week to get to him, and took him a week to eat (LARGE jar!), and was delicious and moist the whole time. Wonderful idea for school lunches!!

SWEET MOTHER OF ABRAHAM LINCOLN! Does this strike ANYONE else as a gross overload of sugar, or is it just me. I’d let me kid eat nearly a whole bag of marshmallows, but there even to a sugar junkie like me, there is just something that looks WRONG about this dessert. Seriously, it looks like comatose and dyed neon blue tables and couches just DYING to happen. ;D

yes i was wondering if this would make it to a ship my husband is deployed and he will be gone for his birthday will this last a couple weeks?

Instead of making the cake and then putting it in, I baked the cake IN the jar. It’s so cute! But I made a silly mistake and didn’t wait until the cake was 100% cooled to ice it. If you do what I do, the icing will “dip” a little. But nothing major. It’s too cute, really! I’m giving it to my friend for her 16th. I will definitely be using this 3827409384 more times!
